Appellation area
Between the River Nielle and the Orbieu, the appellation Corbières Boutenac covers 10 communities at an average height above sea level of 80 to100 m. It is a rocky, hilly area and part of the Garrigue. Boutenac land has a potential of 2513 ha of which half are vineyards.
Geology
The molasses, the backbone of Boutenac area stretch from Saint Laurent de la Cabrerisse, to the gates of Ornaisons. These form a rounded relief, a succession of elongated ranges topped with a considerable amount of rounded stones and solicitous elements.
Climate
Mediterranean climate, protected by South and Marine winds by the Fontfroide mountain range, Boutenac does not have a lot of rainfall. The dry season is long and water shortages are quite obvious; this provides the ideal conditions for maturation until mid-October. This long vegetative cycle facilitates the perfect maturation for all grape types and especially the Carignan and Mourvedre types.
Grapes
The wines are produced from Carignan, Grenache, Syrah, and Mourvedre grapes. Carignan accounts for 30 to 50 % of planting. The Syrah must not account for more than 30% for planting of the parcels producing the appellation wine.
Vinification
Carignan is manually harvested and transported intact to the vinification site. Wines are produced by standard vinification including initial pressing or using complete grape collecting.
