In an exceptional landscape of Mediterranean hills, the Saint Guilhem le Désert IGP is situated in the north part of the Hérault department, at the foot of the Larzac plateau and the Cévennes Mountains. Saint Guilhem le Désert is not only the jewel of Roman art, the high place laden with history, a step in the pilgrimage route of Saint Jacques de Compostelle, and a classified UNESCO World Heritage site, but also, because of its location in the heart of the area of wine production, gave its name to the IGP. In terms of all this, we cannot forget the religious buildings in Aniane: just as many monuments know how to hold your attention in this area. The climate here is characteristic and fundamentally influences the vineyards, which are mostly placed between 100 and 150 meters above sea level. The collection of wines is characterized by a remarkable freshness. The red wines, whether macerated for a long or short period of time, benefit from extremely subtle tannins; the rosés, as well as the white wines, express an elevated, aromatic strength. Recognized under the IGP classification in only 5 municipalities, the wine-growers close to the zone wished to extend the zone of production, considering the common soil they shared. Ever since, the zone has been extended to an area of 71 municipalities for a production of 10,000 hl of red wines, rosés, and white wines.
